1 pound spaghetti
1 pound ground beef
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup marinara sauce
1/4 cup cream cheese
24 pimento-stuffed green olives, sliced
Red food coloring (optional)
Instructions
Cook spaghetti according to package directions. Drain and set aside.
In a large bowl, combine ground beef, breadcrumbs, milk, egg, Parmesan cheese, oregano, salt, and pepper. Mix well.
Form the mixture into 1-inch meatballs.
Brown the meatballs in a skillet over medium heat. Drain off any excess grease.
Add marinara sauce to the skillet with the meatballs. Simmer for 10-15 minutes, or until meatballs are cooked through.
While meatballs are simmering, prepare the “eyeballs.” In a small bowl, mix cream cheese with a few drops of red food coloring if desired to create a bloodshot effect.
Place a small dollop of cream cheese mixture onto each meatball.
Top the cream cheese with a slice of green olive to create the iris and pupil.
Serve the “eyeball” meatballs over the cooked spaghetti.
Notes
For a spicier sauce, add a pinch of red pepper flakes to the marinara.
You can make the meatballs and sauce ahead of time and reheat before serving.
