Ingredients
Scale
4 cups water
1 cup frozen or fresh raspberries
2 black tea bags (optional, for caffeine)
2 cinnamon sticks
4 whole cloves
2 star anise pods
1 inch piece of fresh ginger, sliced
1 tablespoon honey or maple syrup (to taste)
1 orange, sliced (for garnish and flavor)
Instructions
Combine the water, raspberries, cinnamon sticks, cloves, star anise, and ginger in a medium saucepan.
Bring the mixture to a gentle boil over medium heat.
Reduce the heat to low, cover, and let it simmer for 15 minutes to allow the spices and fruit to infuse the water.
If using tea bags, remove the saucepan from the heat and add the tea bags. Steep for 3 to 5 minutes, then remove the tea bags.
Strain the liquid through a fine-mesh sieve into a heatproof pitcher or mugs, pressing gently on the solids to extract all the liquid. Discard the solids.
Stir in the honey or maple syrup until dissolved.
Serve immediately, garnished with a slice of fresh orange.
Notes
For a caffeine-free version, simply omit the black tea bags.
You can substitute dried hibiscus flowers for some of the fresh raspberries for a tarter flavor.
Taste the tea before adding sweetener; the raspberries provide natural sweetness.
