Ingredients

  • Milk (whole or preferred type): 4 cups
  • Good quality dark chocolate (chopped or chips): 4 ounces
  • Cocoa powder (unsweetened): 2 tablespoons
  • Sugar (or to taste): 2-4 tablespoons
  • Cinnamon sticks: 2
  • Star anise: 3 whole pods
  • Cloves (whole): 6
  • Orange zest: 1 strip (about 1 inch long)
  • Red wine (non-alcoholic substitute optional): 1/2 cup
  • Vanilla extract: 1 teaspoon
  • Pinch of salt: 1

Instructions

  1. Combine milk, cinnamon sticks, star anise, cloves, and orange zest in a saucepan.
  2. Heat the mixture over medium heat until it simmers gently. Do not boil.
  3. Remove the saucepan from the heat. Cover it and let the spices steep in the warm milk for 15 minutes. This builds the mulled flavor.
  4. Strain the spiced milk through a fine-mesh sieve into a clean saucepan, discarding the solids.
  5. Return the strained milk to medium-low heat.
  6. Whisk in the chopped chocolate and cocoa powder until completely melted and smooth.
  7. Stir in the sugar, vanilla extract, and salt. Continue stirring until the sugar dissolves.
  8. If using, stir in the red wine (or a splash of grape juice for a non-alcoholic version). Heat through gently for 1-2 minutes; do not boil after adding wine.
  9. Pour into mugs and serve immediately.
