Make the best creamy, restaurant-style nacho cheese sauce at home in just 10 minutes. This easy recipe uses real cheddar for a smooth, velvety texture perfect for dipping chips or topping nachos.

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 1 cup shredded sharp cheddar cheese (real cheddar cheese is key)
  • 1/4 cup evaporated milk (for extra creaminess)
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper (optional, for a slight kick)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Gradually whisk in the whole milk until the mixture is smooth and begins to thicken slightly.
  4. Reduce the heat to low. Add the shredded cheddar cheese, evaporated milk, salt, garlic powder, onion powder, paprika, and cayenne pepper (if using).
  5. Stir continuously until the cheese is completely melted and the sauce is smooth and velvety. Do not let it boil.
  6. Remove from heat immediately once smooth. This is your quick cheese dip, ready in minutes.
  7. Serve immediately over nachos, fries, or use as an appetizer dip.
