1 cup Greek yogurt, plain or vanilla
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
1/2 cup fresh strawberries, chopped
1/2 cup dark chocolate chips
1 tablespoon coconut oil (optional, for melting chocolate)
Instructions
Line a baking sheet with parchment paper.
In a medium bowl, mix the Greek yogurt, maple syrup, and vanilla extract until smooth.
Gently fold in the chopped strawberries.
Drop spoonfuls of the yogurt mixture onto the prepared baking sheet, forming small clusters. Aim for about 12 to 16 clusters.
Place the baking sheet in the freezer for at least 1 hour, or until the clusters are firm.
While the clusters freeze, melt the chocolate chips. If using coconut oil, mix it with the chips before melting. Melt in a microwave in 30-second intervals, stirring between each, until smooth.
Remove the frozen clusters from the freezer. Drizzle or dip the top of each cluster with the melted chocolate.
Return the clusters to the freezer for 15 to 20 minutes, or until the chocolate sets.
Store the finished clusters in an airtight container in the freezer.
Notes
Use full-fat yogurt for the firmest clusters.
If you prefer a sweeter base, use vanilla-flavored Greek yogurt.
For a quicker set, place the clusters in the freezer while you prepare the chocolate.
