Make this simple, no-bake dessert featuring layers of graham cracker crust, bright lemon cheesecake filling, and sweet strawberry topping, all frozen into an easy-to-break bark.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/4 cup heavy cream
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup strawberry puree (from about 4 large strawberries)
  • 1/4 cup sliced fresh strawberries (for topping)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Combine graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until the crumbs are evenly moistened.
  3. Press the crumb mixture firmly and evenly into the bottom of the prepared pan to form the crust. Place the pan in the freezer while you prepare the filling.
  4. In a separate bowl, beat the softened cream cheese until smooth. Add the powdered sugar, heavy cream, lemon juice, and lemon zest. Beat until the mixture is light and creamy.
  5. Spread half of the lemon cheesecake filling evenly over the chilled crust. Return the pan to the freezer for 15 minutes to firm up slightly.
  6. Gently spread the strawberry puree over the set lemon layer.
  7. Top the strawberry layer with the remaining lemon cheesecake filling, spreading it carefully to cover the puree layer.
  8. Sprinkle the sliced fresh strawberries over the top layer.
  9. Freeze the bark for at least 4 hours, or until completely firm.
  10. Use the parchment paper overhang to lift the bark from the pan. Place it on a cutting board and break it into irregular pieces.
  11. Keep the bark stored in an airtight container in the freezer.

Notes

  • For the best texture, allow the bark to sit at room temperature for 5 minutes before breaking or serving.
  • If you want a more distinct strawberry layer, chill the puree layer for 30 minutes before adding the final lemon layer.
  • Use fresh lemon juice for the brightest flavor.
