- 1/2 cup butter
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup packed light brown sugar
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 6 cups crisp rice cereal
- Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large saucepan, melt the butter over medium heat.
- Stir in the granulated sugar, brown sugar, and milk. Bring the mixture to a boil, stirring constantly. Boil for exactly one minute.
- Remove the saucepan from the heat. Stir in the peanut butter and vanilla extract until completely smooth.
- Pour the hot peanut butter mixture over the crisp rice cereal in a large bowl. Mix gently until the cereal is evenly coated.
- Press the mixture evenly into the prepared baking pan using a spatula or wax paper. Do not pack too tightly.
- Allow the bars to cool and set completely at room temperature for at least 2 hours, or chill in the refrigerator for 30 minutes for faster setting.
- Use the parchment paper overhang to lift the bars from the pan. Cut into squares.
Notes
- For easy cutting, lightly spray your knife with cooking spray before slicing the cooled bars.
- Store the bars in an airtight container at room temperature for up to one week.
- If you prefer a firmer bar, reduce the milk by 1 tablespoon.
