1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
1 teaspoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1 cup heavy whipping cream, cold
1 (14 ounce) can sweetened condensed milk
1 box (about 14 ounces) graham crackers or vanilla wafers
2 cups fresh strawberries, sliced
Extra sliced strawberries for topping
Instructions
In a large bowl, beat the softened cream cheese until smooth. Add the powdered sugar, lemon zest, lemon juice, and vanilla extract. Beat until fully combined.
In a separate, chilled bowl, whip the heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
Stir the sweetened condensed milk into the cream cheese mixture until smooth. This is your lemon filling.
Arrange a single layer of graham crackers or wafers on the bottom of an 8×8 inch baking dish.
Spread about one-third of the lemon filling evenly over the crackers. Top with half of the sliced strawberries.
Repeat the layers: crackers, filling, remaining strawberries.
Finish with a final layer of crackers topped with the remaining lemon filling, spreading it evenly to cover the top layer completely.
Cover the dish tightly with plastic wrap. Refrigerate for at least 6 hours, or preferably overnight, to allow the crackers to soften.
Before serving, top the cake with the reserved fresh strawberry slices. Slice and serve cold.
Notes
Use cold heavy cream and a cold mixing bowl for the best whipping results.
If using graham crackers, you may need slightly more chilling time for them to soften completely.
For a brighter lemon flavor, increase the lemon juice to 3 tablespoons.
