Prepare these bright and chewy no-bake lemon almond date bars. They require no oven and make a quick, naturally sweetened snack.

Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup raw almonds
  • 1/2 cup shredded unsweetened coconut
  • 1/4 cup fresh lemon juice
  • Zest of 1 large lemon
  • 1 tablespoon chia seeds
  • Pinch of sea salt

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Place the raw almonds in a food processor and pulse until they form a coarse, crumbly texture. Do not over-process into butter.
  3. Add the pitted dates, shredded coconut, lemon juice, lemon zest, chia seeds, and salt to the food processor.
  4. Process the mixture until it comes together and forms a sticky dough that clumps when pressed between your fingers. Stop and scrape down the sides as needed.
  5. Transfer the mixture to the prepared pan. Press the mixture firmly and evenly into the bottom of the pan using the back of a spatula or your hands.
  6. Place the pan in the refrigerator and chill for at least 2 hours, or until firm enough to slice.
  7. Use the parchment paper overhang to lift the block out of the pan. Cut into 12 or 16 bars.

Notes

  • For easier processing, soak the dates in hot water for 5 minutes, then drain them well before use.
  • Store leftover bars in an airtight container in the refrigerator for up to one week.
  • You can substitute walnuts or pecans for the almonds if desired.
