  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • For Glaze (Optional): 1 cup powdered sugar, 2 tablespoons blood orange juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together the eggs and granulated sugar until pale and slightly fluffy.
  3. Slowly whisk in the olive oil until fully combined.
  4. Stir in the milk, blood orange zest, blood orange juice, and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until no streaks of flour remain. Do not overmix.
  7. Pour the batter into the prepared cake pan.
  8. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
