- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/2 cup unsalted butter, melted
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 cup unsulfured molasses
- 1/2 cup boiling water
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
- Add the melted butter, brown sugar, and granulated sugar to the dry ingredients. Mix until just combined.
- Beat in the egg and molasses until smooth.
- Carefully stir in the boiling water until the batter is uniform. The batter will be thin.
- Pour the batter into the prepared loaf pan.
- Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
Notes
- The batter will be quite thin; this is normal for a moist gingerbread.
- Use quality molasses for the best deep flavor.
- For an extra treat, drizzle with a simple lemon glaze after cooling.
