4 bone-in or boneless pork chops (about 1 inch thick)
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried Italian seasoning
4 cloves garlic, minced
1 cup chicken broth
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season the pork chops on both sides with salt, pepper, and Italian seasoning.
Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 3 to 4 minutes per side until golden brown. Remove the pork chops from the skillet and set them aside on a plate.
Reduce the heat to medium. Add the minced garlic to the same skillet and cook for about 30 seconds until fragrant. Do not let the garlic burn.
Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let the broth simmer and reduce slightly for 2 minutes.
Stir in the heavy cream and bring the mixture to a gentle simmer.
Whisk in the Parmesan cheese until the sauce is smooth and thickened.
Return the pork chops to the skillet. Spoon some of the sauce over the chops. Cover the skillet and cook for 5 to 7 minutes, or until the internal temperature of the pork chops reaches 145 degrees Fahrenheit.
Stir the fresh spinach into the sauce until it wilts, about 1 minute.
Garnish with fresh parsley before serving.
Notes
If your pork chops are very thin, reduce the final cooking time to prevent them from drying out.
You can substitute milk for heavy cream, but the sauce will be thinner. Add a teaspoon of cornstarch mixed with water to thicken if needed.
For extra flavor, use fresh garlic instead of dried.
