1 lb large shrimp, peeled and deveined
1 tablespoon olive oil
2 tablespoons butter
4 cloves garlic, minced
1/2 cup sun-dried tomatoes packed in oil, drained and chopped
1/2 cup chicken broth
1 cup heavy cream
4 oz cream cheese, cubed
1/2 cup grated Parmesan cheese
1 teaspoon dried Italian seasoning
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
2 tablespoons fresh parsley, chopped, for garnish
Instructions
Pat the shrimp dry and season lightly with salt and pepper. Set aside.
Heat the olive oil and butter in a large skillet over medium heat.
Add the minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it reduce slightly for 2 minutes.
Reduce the heat to low. Stir in the heavy cream, cream cheese cubes, Italian seasoning, and red pepper flakes if using. Stir constantly until the cream cheese melts and the sauce is smooth.
Stir in the Parmesan cheese until fully incorporated and the sauce thickens slightly. Taste and adjust salt and pepper.
Add the seasoned shrimp to the skillet, nestling them into the sauce. Cook for 3 to 5 minutes, turning once, until the shrimp are pink and cooked through. Do not overcook.
Remove the skillet from the heat. Garnish with fresh parsley before serving.
Notes
Serve this dish over cooked linguine, rice, or with crusty bread to soak up the extra sauce.
If you prefer a thinner sauce, add a splash more chicken broth or cream at the end.
Use shrimp that are medium or large size for the best texture in this quick-cooking dish.
