This One-Pan Greek Lemon Chicken delivers bright Mediterranean flavor with minimal cleanup. Enjoy juicy chicken seasoned with fresh herbs for a simple, healthy, and satisfying dinner.

Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs or breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, thinly sliced
  • 1 cup small potatoes, halved
  • 1 red onion, cut into wedges

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper to make the marinade.
  3. Add the chicken, potatoes, and red onion to the bowl. Toss everything well to coat evenly.
  4. Spread the chicken and vegetables in a single layer on a large rimmed baking sheet. Arrange the lemon slices on top of the chicken and vegetables.
  5. Bake for 30 to 35 minutes, or until the chicken is cooked through and the potatoes are tender.
  6. Serve immediately, spooning any pan juices over the chicken.

Notes

  • For extra flavor, use chicken thighs; they stay juicier during baking.
  • If you prefer softer vegetables, toss them with the chicken and allow them to marinate for at least 30 minutes before baking.
  • You can substitute 1 cup of cherry tomatoes for half the potatoes if you like.
