Prepare a simple, flavorful dinner using chicken breasts and broccoli florets cooked together on one pan with a sweet and savory honey garlic sauce.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Sesame seeds, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, ginger, and red pepper flakes to make the sauce base.
  3. Place the cut chicken pieces and broccoli florets onto the prepared baking sheet. Drizzle with olive oil and toss lightly to coat.
  4. Pour about two-thirds of the honey garlic sauce over the chicken and broccoli mixture. Toss everything directly on the pan until evenly coated. Spread the chicken and broccoli into a single layer.
  5. Bake for 15 minutes.
  6. Remove the pan from the oven. Whisk the cornstarch slurry into the remaining one-third of the sauce. Pour this thickened sauce over the chicken and broccoli. Gently toss everything on the pan again.
  7. Return the pan to the oven and bake for another 5 to 8 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C) and the sauce has thickened slightly.
  8. Garnish with sesame seeds before serving.

Notes

  • For crispier broccoli, you can roast the broccoli alone for 8 minutes before adding the chicken and the sauce.
  • Serve this dish over cooked rice or quinoa for a complete meal.
  • If you do not have rice vinegar, white vinegar can be substituted, but use slightly less.
