Make this bright, creamy chicken noodle soup entirely in one pot for simple cleanup. It delivers savory chicken flavor balanced with fresh lemon zest and juice.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups low sodium chicken broth
  • 8 ounces egg noodles
  • 1/2 cup half-and-half or milk (for creaminess)
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the chicken pieces and cook until lightly browned on all sides, about 5 minutes. Remove the chicken and set it aside.
  3. Add the onion, carrots, and celery to the same pot. Cook until the vegetables soften, about 5 to 7 minutes.
  4. Stir in the minced garlic and thyme and cook for 1 minute until fragrant.
  5. Pour in the chicken broth. Bring the mixture to a boil.
  6. Add the egg noodles and return the soup to a simmer. Cook according to package directions, usually 6 to 8 minutes.
  7. Return the cooked chicken to the pot. Reduce the heat to low.
  8. Stir in the half-and-half, lemon juice, and lemon zest. Heat through gently for 2 minutes; do not boil after adding the dairy.
  9. Season the soup with salt and pepper to your taste.
  10. Ladle the soup into bowls and garnish with fresh parsley before serving.

Notes

  • For extra brightness, add a small pinch of red pepper flakes with the garlic.
  • If you prefer a thicker soup, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water before stirring it into the simmering broth (before adding the noodles).
  • You can substitute rotisserie chicken for the raw chicken; add it during the last 5 minutes of simmering.
