1 pound cremini mushrooms, sliced
3 cloves garlic, minced
1 small yellow onion, chopped
1 1/2 cups orzo pasta
4 cups vegetable broth
1/2 cup dry white wine (optional)
1/2 teaspoon dried thyme
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons fresh parsley, chopped
Salt and black pepper to taste
Instructions
Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.
Add the sliced mushrooms and cook until they release their liquid and brown, about 8 to 10 minutes.
Add the chopped onion and cook until softened, about 3 minutes.
Stir in the minced garlic and cook for 1 minute until fragrant.
Add the orzo, vegetable broth, white wine (if using), and dried thyme to the pot. Stir well.
Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 12 to 15 minutes, stirring occasionally to prevent sticking, until the orzo is tender and most of the liquid is absorbed.
Remove the pot from the heat. Stir in the heavy cream and grated Parmesan cheese until the sauce is smooth and creamy.
Season with salt and pepper to your preference.
Stir in the fresh parsley before serving.
Notes
If you skip the wine, substitute it with an equal amount of extra vegetable broth.
