1 large yellow onion, thinly sliced
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon black pepper
4 cups low-sodium beef broth
8 ounces dried pasta (such as penne or rotini)
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt to taste
Fresh parsley, chopped (for garnish)
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add the sliced onion and cook, stirring occasionally, until softened and lightly browned, about 8-10 minutes.
Add the minced garlic, dried thyme, and black pepper. Cook for 1 minute more until fragrant.
Pour in the beef broth and bring to a simmer.
Add the dried pasta to the pot. Stir well to ensure the pasta is submerged in the liquid.
Cover the pot and cook according to pasta package directions, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed, about 12-15 minutes.
Stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes, stirring, until the sauce is creamy and heated through.
Season with salt to taste.
Serve hot, garnished with fresh parsley.
Notes
For a richer flavor, you can deglaze the pot with a splash of dry white wine after cooking the onions and before adding the broth.
Adjust the amount of cream to achieve your desired sauce consistency.
