- 1.5 lbs beef sirloin, cut into thin strips
- 1 tablespoon olive oil
- 1 pound cremini mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 10.5 oz condensed cream of mushroom soup
- 1 cup beef broth
- 1/2 cup sour cream
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 8 oz egg noodles
- Cook egg noodles according to package directions. Drain and set aside.
- Season the beef strips with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown the beef in batches. Remove beef and set aside.
- Add mushrooms to the same skillet. Cook until browned, about 5-7 minutes.
- Add onion and cook until softened, about 3 minutes. Stir in garlic and cook for 1 minute more.
- Stir in cream of mushroom soup and beef broth. Bring mixture to a simmer.
- Return the beef to the skillet. Reduce heat to low.
- Stir in sour cream and Dijon mustard. Heat through gently; do not boil after adding sour cream.
- Taste and adjust seasonings.
- Serve the beef mixture over the cooked egg noodles.
Notes
- Ensure your beef strips are thin so they cook quickly and stay tender.
- Do not let the sauce boil after you add the sour cream to prevent it from separating.
- Use good quality beef broth for the best flavor base.
