This Overnight Cinnamon Roll French Toast Bake is the perfect make-ahead brunch casserole. It combines the sweet, cinnamony goodness of cinnamon rolls with the comforting texture of French toast. Prepare it the night before and wake up to a delicious breakfast ready to bake.

Ingredients

Scale
  • 1 (12.9 ounce) package refrigerated cinnamon rolls with icing
  • 6 large eggs
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: powdered sugar, extra cinnamon, berries

Instructions

  1. Grease a 9×13 inch baking dish.
  2. Unroll the cinnamon rolls and cut each roll into 4 pieces. Spread the pieces evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, cinnamon, vanilla extract, and salt until well combined.
  4. Pour the egg mixture evenly over the cinnamon roll pieces in the baking dish.
  5. Cover the baking dish tightly with plastic wrap and refrigerate overnight, or for at least 8 hours.
  6. The next morning, preheat your oven to 350°F (175°C).
  7. Remove the plastic wrap and bake for 30-40 minutes, or until the bake is golden brown and cooked through.
  8. Let it cool for a few minutes before serving. Drizzle with the included icing or your favorite toppings.

Notes

  • For a richer flavor, you can use a mix of milk and half-and-half instead of milk and heavy cream.
  • If you prefer a less sweet bake, you can reduce the amount of granulated sugar in the egg mixture.
  • Ensure the egg mixture is fully soaked into the cinnamon rolls for the best texture.
