1/2 cup rolled oats
1 cup milk (dairy or non-dairy)
1 tablespoon chia seeds
1 ripe persimmon, diced
1 teaspoon fresh ginger, grated
1 tablespoon maple syrup (optional)
Pinch of salt
Instructions
Combine the rolled oats, milk, chia seeds, grated ginger, maple syrup (if using), and salt in a jar or container.
Stir well to mix all ingredients thoroughly.
Fold in the diced persimmon.
Seal the container and refrigerate for at least 6 hours, or preferably overnight.
In the morning, stir the oats. Add a splash more milk if the consistency is too thick for your liking.
Serve cold. Enjoy your simple, flavorful breakfast!
Notes
Use Fuyu persimmons as they are firmer and hold their shape well when raw.
Adjust sweetness to your preference by adding more or less maple syrup.
If you prefer a creamier texture, use full-fat milk or a high-protein non-dairy alternative.
