  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 ¼ cups milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)
  • ½ cup heavy cream
  • 1 tablespoon powdered sugar (for whipped cream)
  • Optional: maple syrup, yogurt, chocolate chips for topping

Instructions

  1. Whisk together flour, granulated sugar, baking powder, and salt in a large bowl.
  2. In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
  3. Pour wet ingredients into dry ingredients. Whisk until just combined. Do not overmix. Lumps are fine.
  4. Heat a lightly oiled griddle or non-stick pan over medium heat.
  5. Pour about 2 tablespoons of batter per pancake onto the hot griddle. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface.
  6. Remove pancakes from griddle. While warm, gently fold each pancake in half to create a taco shape. Let cool slightly to hold shape.
  7. Whip heavy cream and powdered sugar in a cold bowl until stiff peaks form.
  8. Fill each pancake taco with fresh berries and a dollop of whipped cream or yogurt.
  9. Serve immediately with optional toppings like maple syrup or chocolate chips.
