  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat your oven to 225 degrees F (107 degrees C). Line two large baking sheets with parchment paper.
  2. Slice the zucchini thinly, about 1/16 inch thick. A mandoline slicer works best for uniform thickness.
  3. In a large bowl, toss the zucchini slices with olive oil, parsley, lemon zest, salt, and pepper until evenly coated.
  4. Arrange the zucchini slices in a single layer on the prepared baking sheets. Do not overlap them.
  5. Bake for 1 hour. Flip the chips over.
  6. Continue baking for another 1 to 1.5 hours, checking frequently after the first hour. The chips are done when they are dry and crispy.
  7. Turn off the oven and prop the door open slightly. Let the chips cool completely in the oven for extra crispness.

Notes

  • For the crispest chips, ensure the zucchini slices are very thin.
  • If you notice some chips browning too quickly, remove them from the oven early.
  • Store cooled chips in an airtight container at room temperature.
