6 pounds ripe peaches, peeled, pitted, and sliced
1 cup granulated sugar
1/2 cup packed light brown sugar
1/4 cup apple cider vinegar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
Pinch of salt
Instructions
Combine peaches, granulated sugar, brown sugar, apple cider vinegar, cinnamon, nutmeg, cloves, and salt in a large, heavy-bottomed pot or Dutch oven.
Stir well to combine all ingredients.
Bring the mixture to a boil over medium-high heat, stirring constantly.
Reduce heat to low and simmer, uncovered, for 2 to 3 hours, stirring occasionally to prevent sticking.
The peach mixture should thicken and darken in color. The peaches should be very soft.
Use an immersion blender to puree the mixture directly in the pot until smooth. Alternatively, carefully transfer the mixture to a blender or food processor and puree until smooth.
Return the pureed peach butter to the pot and continue to simmer on low heat for another 30 minutes to 1 hour, stirring frequently, until the butter is very thick and coats the back of a spoon.
To test for readiness, place a small dollop of peach butter on a chilled plate. If no liquid separates around the edges, it is ready.
Carefully ladle the hot peach butter into sterilized jars, leaving 1/4 inch headspace.
Process in a boiling water bath for 10 minutes for shelf stability, or cool and store in the refrigerator for up to 3 weeks.
Notes
Choose very ripe peaches for the best flavor.
Adjust spices to your preference.
For a thinner consistency, reduce the simmering time.
For a thicker consistency, extend the simmering time.
