  • 6-8 ripe fresh peaches, peeled, pitted, and sliced
  • 1/2 cup granulated sugar (for peaches)
  • 1 teaspoon ground cinnamon (for peaches)
  • 1/4 teaspoon ground nutmeg (for peaches)
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (for topping)
  • 1/4 cup packed light brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches with 1/2 cup granulated sugar, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches.
  3. Pour the peach mixture into a 9×13 inch baking dish.
  4. In a separate medium bowl, whisk together the flour, 1/2 cup granulated sugar, brown sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Stir in the milk and vanilla extract until just combined. Do not overmix.
  7. Drop spoonfuls of the topping mixture evenly over the peaches in the baking dish.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  9. Let the cobbler cool for at least 15 minutes before serving.

Notes

  • For extra flavor, you can add a pinch of ground ginger to the peach mixture.
  • If your peaches are very sweet, you can reduce the amount of sugar added to them.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
