Make a simple peach jam at home. This recipe turns fresh peaches into a sweet spread. Use it on toast or give it as a gift.

  • 4 cups peeled, pitted, and chopped ripe peaches (about 4 pounds whole peaches)
  • 4 cups granulated sugar
  • 1/4 cup fresh lemon juice

Instructions

  1. Wash and peel peaches. Remove pits and chop peaches into small pieces.
  2. In a large, heavy-bottomed pot, combine chopped peaches, sugar, and lemon juice.
  3. Stir well to combine. Let the mixture sit for 30 minutes to an hour. This helps the peaches release their juices.
  4. Place the pot over medium-high heat. Bring the mixture to a rolling boil, stirring constantly to prevent sticking.
  5. Once boiling, reduce heat to medium and continue to boil, stirring often, for 20-30 minutes. The jam will thicken.
  6. To test for doneness, place a small plate in the freezer for a few minutes. Drop a teaspoon of hot jam onto the cold plate. Wait 30 seconds, then push the jam with your finger. If it wrinkles, it is ready. If not, continue cooking for a few more minutes and retest.
  7. Remove the pot from heat. Carefully ladle the hot jam into sterilized jars, leaving 1/4 inch headspace.
  8. Wipe jar rims clean. Place lids and rings on jars.
  9. Process jars in a boiling water bath for 10 minutes. This creates a vacuum seal for shelf-stable jam.
  10. Remove jars from water bath and let them cool completely on a wire rack. Check seals after 24 hours. Properly sealed jars will have a lid that does not flex when pressed.
