Ingredients
Scale
4 pounds ripe peaches, peeled, pitted, and chopped
4 cups granulated sugar
1/4 cup fresh lemon juice
Instructions
Combine peaches, sugar, and lemon juice in a large, heavy-bottomed pot.
Stir to combine. Let stand for 30 minutes to allow juices to release.
Bring the mixture to a boil over medium-high heat, stirring constantly.
Reduce heat to medium-low. Simmer, stirring occasionally, for 45-60 minutes.
Cook until the preserves thicken and reach the desired consistency.
Test for doneness by placing a small amount on a chilled plate. If it wrinkles when pushed, it’s ready.
Carefully ladle hot preserves into sterilized jars, leaving 1/4 inch headspace.
Wipe jar rims clean. Place lids and rings on jars.
Process jars in a boiling water canner for 10 minutes.
Remove jars from canner. Let cool completely on a wire rack.
Notes
Choose firm, ripe peaches for the best flavor and texture.
Adjust sugar to your taste.
Sterilize jars and lids before use for safe canning.
