  • 1 1/2 cups rolled oats
  • 1/2 cup whole wheat flour or oat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large bowl, mix together the mashed bananas, peanut butter, maple syrup, and vanilla extract until smooth.
  3. In a separate medium bowl, whisk together the rolled oats, flour, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients. Stir until just combined. Be careful not to overmix.
  5. Fold in the chocolate chips.
  6. Spread the batter evenly into the prepared baking pan. Press down gently with a spatula.
  7. Bake for 20 to 25 minutes, or until the edges are lightly golden and a toothpick inserted near the center comes out mostly clean.
  8. Let the bars cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
