8 pounds ripe pears, peeled, cored, and chopped
1 cup apple cider or water
1 cup granulated sugar (adjust to taste)
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1 tablespoon fresh lemon juice
Instructions
Combine chopped pears and apple cider in a large pot or Dutch oven.
Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until pears are very tender.
Use an immersion blender to puree the pears directly in the pot until smooth. Alternatively, carefully transfer the cooked pears to a blender and process until smooth.
Stir in sugar, cinnamon, nutmeg, cloves, and ginger.
Return the pot to the stove over low heat. Cook uncovered, stirring occasionally, for 1.5 to 2 hours, or until the butter thickens to your desired consistency. It should mound on a spoon.
Stir in lemon juice during the last 10 minutes of cooking.
Ladle hot pear butter into clean, hot jars, leaving 1/2 inch headspace. Process in a boiling water bath for 10 minutes for pint jars, or follow your preferred canning method.
If not canning, cool completely and store in airtight containers in the refrigerator for up to 3 weeks.
Notes
Use very ripe pears for the best flavor and natural sweetness.
Adjust sugar to your preference based on the sweetness of your pears.
For a chunkier butter, mash some of the pears instead of fully pureeing.
This recipe is excellent for canning to extend shelf life.
