1 loaf French or Italian bread
1 cup cooked, shredded chicken
1/2 cup prepared pesto sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
4 tablespoons unsalted butter, melted
2 cloves garlic, minced
1 tablespoon fresh parsley, chopped
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Slice the loaf of bread lengthwise, creating two long halves. Do not cut all the way through; keep the bottom connected like a hinge.
In a medium bowl, mix the shredded chicken, pesto sauce, and mozzarella cheese.
Spread the butter evenly over the cut sides of both bread halves. Sprinkle the minced garlic over the butter.
Spoon the chicken and cheese mixture evenly over the bottom half of the bread.
Place the top half of the bread over the filling.
Wrap the entire loaf tightly in aluminum foil.
Bake for 20 minutes.
Carefully unwrap the foil. Sprinkle the Parmesan cheese over the top.
Return the bread to the oven, unwrapped, and bake for another 5-7 minutes, or until the cheese is golden brown and bubbly.
Garnish with fresh parsley before slicing and serving hot.
Notes
You can use rotisserie chicken to save prep time.
