Enjoy a delicious and low-carb meal with these Philly Cheesesteak Stuffed Peppers. Bell peppers are filled with a savory mixture of steak, onions, peppers, and cheese, offering a satisfying dinner or lunch option.

Ingredients

  • 2 large bell peppers, halved lengthwise and seeds removed
  • 1 pound thinly sliced ribeye steak
  • 1 medium onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 4 ounces provolone cheese, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place the halved bell peppers cut-side up in a baking dish.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Add the sliced steak and cook until browned. Remove steak from skillet and set aside.
  5. Add the sliced onion and green bell pepper to the skillet. Cook until softened, about 5-7 minutes.
  6. Return the steak to the skillet with the vegetables. Season with salt and pepper.
  7. Spoon the steak and vegetable mixture evenly into the bell pepper halves.
  8. Top each stuffed pepper with slices of provolone cheese.
  9. Add about 1/4 cup of water to the bottom of the baking dish.
  10. Cover the baking dish with foil and bake for 30 minutes.
  11. Remove foil and bake for another 10-15 minutes, or until peppers are tender and cheese is melted and bubbly.

Notes

  • For extra flavor, you can add mushrooms to the vegetable mixture.
  • If you don’t have provolone, you can use mozzarella or a mix of cheeses.
  • Serve hot for the best taste.
