Make this simple, tropical smoothie using frozen pineapple and coconut milk for a quick, refreshing drink.

Ingredients

  • 1.5 cup frozen pineapple chunks
  • 0.75 cup unsweetened coconut milk (canned or carton)
  • 0.5 cup water or ice cubes (adjust for thickness)
  • 1 tablespoon shredded unsweetened coconut
  • 1 teaspoon lime juice (optional)
  • 1 teaspoon sweetener (honey or maple syrup, optional)

Instructions

  1. Place the frozen pineapple chunks, coconut milk, water or ice, shredded coconut, lime juice, and sweetener (if using) into a high-speed blender.
  2. Secure the lid and start blending on a low speed, gradually increasing to high.
  3. Blend until the mixture is completely smooth and creamy. Stop and scrape down the sides if necessary.
  4. If the smoothie is too thick, add a small amount of extra liquid and blend again briefly.
  5. Pour the smoothie into a glass and serve immediately.

Notes

  • For a richer texture, substitute carton coconut milk with full-fat canned coconut cream.
  • Add 1 scoop of vanilla or unflavored protein powder for a protein boost.
  • Freeze leftover smoothie mixture in popsicle molds for a healthy frozen treat later.
