1/2 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 cup milk
1/4 cup vegetable oil
1 large egg, lightly beaten
1 cup shredded mozzarella cheese, divided
1/2 cup pizza sauce or marinara sauce
1/2 cup mini pepperoni, chopped (optional)
Instructions
Preheat your oven to 375 degrees F. Line a 12-cup muffin tin with paper liners or grease well.
In a large bowl, whisk together the flour, baking powder, salt, oregano, garlic powder, and pepper.
In a separate medium bowl, whisk together the milk, vegetable oil, and egg until combined.
Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine.
Gently fold in half (1/2 cup) of the mozzarella cheese and the chopped pepperoni, if using.
Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
Top each muffin with a small spoonful of pizza sauce.
Sprinkle the remaining mozzarella cheese over the sauce on top of each muffin.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the pizza muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cheesy pizza cupcakes freeze well. Cool completely, then place in a freezer-safe bag for up to three months. Thaw overnight or reheat from frozen at 350 degrees F for about 15 minutes.
For a different flavor, try adding finely chopped cooked sausage or bell peppers to the batter.
