  • 1 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup mini pepperoni, chopped
  • 1/4 cup tomato sauce
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup vegetable oil

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, and salt.
  3. Stir in the Parmesan cheese, mozzarella cheese, and chopped pepperoni.
  4. In a separate bowl, whisk together the tomato sauce, milk, egg, and vegetable oil until combined.
  5. Pour the wet ingredients into the dry ingredients. Mix just until combined; do not overmix.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 15 to 18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can substitute any pizza toppings you like, such as cooked sausage or chopped bell peppers.
  • These muffins freeze well for quick lunchbox additions. Cool completely before freezing in an airtight container.
