1 cup pomegranate arils
2 jalapeños, seeded and minced
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 lime, juiced
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
Place the pomegranate arils, minced jalapeños, red onion, and cilantro in a medium bowl.
Pour the lime juice and olive oil over the fruit and vegetables.
Sprinkle with kosher salt and black pepper.
Gently fold all ingredients together until just combined. Be careful not to crush the pomegranate seeds too much.
Taste the salsa and adjust salt or lime juice if needed.
Serve immediately or chill for 30 minutes to allow the flavors to meld.
Notes
If you prefer less heat, use only one jalapeño or remove all seeds and white membranes.
This salsa is best when made fresh.
