1 cup cooked quinoa
1/2 cup pomegranate seeds (arils)
1/4 cup chopped walnuts
1 tablespoon maple syrup (or honey)
1/2 teaspoon ground cinnamon
1/4 cup milk (dairy or non-dairy)
Pinch of salt
Instructions
Prepare your quinoa according to package directions if not already cooked. Let it cool slightly.
In a small bowl, mix the ground cinnamon and maple syrup with the milk until combined.
In a medium bowl, combine the warm or room temperature cooked quinoa and the cinnamon milk mixture. Stir gently until the quinoa absorbs the liquid.
Fold in the pomegranate seeds and chopped walnuts.
Add a pinch of salt to balance the sweetness.
