Create a beautiful and festive Pomegranate Rosemary Champagne Cocktail, perfect for any celebration. This drink balances the tartness of pomegranate with the fragrant notes of rosemary and the bright effervescence of champagne.

Ingredients

  • 4 oz Champagne or Prosecco, chilled
  • 1 oz Pomegranate Juice (100% juice preferred)
  • 0.5 oz Fresh Lime Juice
  • 0.25 oz Rosemary Simple Syrup (Recipe note below)
  • Garnish: Rosemary sprig and a few pomegranate arils

Instructions

  1. Prepare the rosemary simple syrup ahead of time. Combine equal parts sugar and water in a saucepan. Add a few rosemary sprigs. Heat gently until sugar dissolves. Remove from heat, let steep for 30 minutes, then strain and chill.
  2. In a cocktail shaker, combine the pomegranate juice, lime juice, and rosemary simple syrup.
  3. Add ice to the shaker. Shake well until thoroughly chilled.
  4. Strain the mixture into a chilled coupe or flute glass.
  5. Top gently with the chilled Champagne or Prosecco.
  6. Garnish each glass with a fresh rosemary sprig and a sprinkle of pomegranate arils before serving.

Notes

  • For a non-alcoholic version, substitute the Champagne with sparkling white grape juice or sparkling water.
  • Taste your pomegranate juice; if it is very sweet, reduce the amount of simple syrup slightly.
  • You can infuse the simple syrup with lime zest for extra brightness if you wish.
