Make a tender and juicy pork loin roast in the oven with minimal effort. This recipe provides clear timing and temperature guidance for perfect slices every time, with a simple pan sauce suggestion.

Ingredients

Scale
  • 1 (3 to 4 pound) pork loin roast, bone-out
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Pat the pork loin roast completely dry using paper towels. This helps create a good crust.
  3. In a small bowl, mix together the kosher salt, black pepper, garlic powder, and dried thyme.
  4. Rub the olive oil all over the pork loin roast.
  5. Sprinkle the seasoning mix evenly over the entire surface of the pork loin, pressing gently so it adheres.
  6. Place the seasoned pork loin roast in a roasting pan or on a rimmed baking sheet.
  7. Roast at 400 degrees Fahrenheit for 15 minutes.
  8. Reduce the oven temperature to 350 degrees Fahrenheit. Continue roasting until the internal temperature reaches 145 degrees Fahrenheit when measured with a meat thermometer inserted into the thickest part of the roast. This usually takes about 15 to 20 minutes per pound.
  9. Remove the pork loin roast from the oven when it hits 145 degrees Fahrenheit.
  10. Transfer the roast to a cutting board and tent it loosely with foil. Let the pork rest for at least 10 to 15 minutes before slicing. This resting time is key for a juicy pork loin.
  11. Slice the roast against the grain into desired thickness.
  12. For a simple pan sauce, place the roasting pan over medium heat on the stovetop. Scrape up any browned bits from the bottom of the pan. Add 1 cup of chicken broth and bring to a simmer, stirring until slightly reduced. You can whisk in 1 tablespoon of cold butter at the end for richness.

Notes

  • For the best results, take the pork loin out of the refrigerator about 30 minutes before seasoning and roasting.
  • The target internal temperature for safe and tender pork is 145 degrees Fahrenheit, followed by a rest.
  • If you prefer a crispier exterior, you can increase the oven temperature back to 425 degrees Fahrenheit for the last 5 minutes of cooking, watching carefully.
