2 tablespoons coarse salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon dried rosemary
1 tablespoon olive oil
Instructions
Remove the roast from the refrigerator 3 hours before cooking.
Preheat your oven to 450°F (230°C).
In a small bowl, mix the salt, pepper, garlic powder, and rosemary.
Rub the entire surface of the roast with olive oil, then generously coat it with the spice mixture.
Place the roast fat side up in a roasting pan.
Roast at 450°F (230°C) for 15 minutes.
Reduce the oven temperature to 325°F (160°C). Do not open the oven door.
Continue roasting until an internal thermometer reads 125°F (52°C) for medium-rare. (Approximate time is 13-15 minutes per pound).
Remove the roast from the oven. Tent loosely with foil.
Let the roast rest for at least 20 minutes before carving. The internal temperature will rise during resting.
Slice against the grain and serve.
Notes
Use a reliable meat thermometer for accuracy.
Resting the meat is crucial for juiciness. Do not skip this step.
For a deeper crust, you can sear the roast on the stovetop before placing it in the oven.
