  • 1 cup liquid egg whites
  • 4 large whole eggs
  • 1/2 cup cooked, chopped spinach
  • 1/4 cup shredded low-moisture mozzarella cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin with cooking spray.
  2. Combine the cottage cheese and whole eggs in a blender. Blend until completely smooth, about 30 seconds. This step is key for fluffiness.
  3. Pour the blended mixture into a large bowl. Whisk in the liquid egg whites until just combined. Do not over-whisk.
  4. Gently fold in the chopped spinach and mozzarella cheese. Season with salt and pepper.
  5. Divide the mixture evenly among the 12 prepared muffin cups, filling each about three-quarters full.
  6. Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
  7. Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.

  • If you prefer a dairy-free version, substitute the cottage cheese with silken tofu and use a dairy-free cheese alternative or omit the cheese entirely.
