1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
2 (8-ounce) packages cream cheese, softened
1 cup canned pumpkin puree
¾ cup granulated sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon ground cloves
2 large eggs
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
For the crust: In a medium bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Press mixture evenly into the bottom of the prepared pan.
Bake crust for 10 minutes. Remove from oven and let cool slightly.
For the filling: In a large bowl, beat softened cream cheese and ¾ cup sugar with an electric mixer until smooth and creamy.
Add pumpkin puree, cinnamon, nutmeg, and cloves. Beat until well combined.
Beat in eggs one at a time, just until incorporated. Stir in vanilla extract.
Pour the pumpkin cheesecake mixture over the cooled crust and spread evenly.
Bake for 45-55 minutes, or until the center is almost set but still slightly jiggly.
Remove from oven and let cool completely on a wire rack.
Once cooled, refrigerate for at least 4 hours, or preferably overnight, before cutting into bars.
Notes
For best results, use full-fat cream cheese.
Ensure cream cheese is at room temperature for a smooth filling.
Do not overbake the cheesecake, as it will continue to set as it cools.
These bars can be made ahead of time, perfect for parties.
