Enjoy the comforting flavors of your favorite fall drink in a crunchy, homemade granola. This Pumpkin Cinnamon Spice Latte Granola brings the essence of a pumpkin spice latte to your breakfast bowl.

Ingredients

Scale
  • 3 cups rolled oats
  • 1 cup pumpkin seeds
  • 1/2 cup chopped pecans
  • 1/4 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1/4 cup pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate chips (optional, added after baking)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, pumpkin seeds, and pecans.
  3. In a separate, smaller bowl, whisk together the maple syrup, melted coconut oil, pumpkin puree, cinnamon, ginger, nutmeg, cloves, vanilla extract, and salt until well combined.
  4. Pour the wet mixture over the dry ingredients. Stir everything together until the oats and nuts are evenly coated.
  5. Spread the granola mixture in a single, even layer on the prepared baking sheet.
  6. Bake for 30 to 35 minutes, stirring halfway through, until the granola is lightly golden and fragrant.
  7. Remove from the oven and let the granola cool completely on the baking sheet. It will crisp up as it cools.
  8. If using, stir in the white chocolate chips once the granola is fully cooled.
  9. Store the finished granola in an airtight container.

Notes

  • For an even stronger coffee flavor, you can add 1 teaspoon of instant espresso powder to the dry spice mixture.
  • If you prefer a less sweet granola, reduce the maple syrup to 3 tablespoons.
  • This granola keeps well for up to two weeks in an airtight container at room temperature.
