This pumpkin magic cake recipe delivers a spiced, magically layered dessert to impress at autumn gatherings. It separates into layers of cake and custard as it bakes.

Ingredients

Scale
  • 1 1/2 cups pumpkin puree
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 large eggs, separated
  • 2 cups whole milk, warm
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease and flour a 9-inch square baking pan or line with parchment paper.
  2. In a large bowl, whisk together the melted butter, sugar, and pumpkin puree until well combined.
  3. Add the egg yolks one at a time, whisking after each addition until smooth.
  4. Gradually whisk in the flour until no lumps remain.
  5. Slowly pour in the warm milk and vanilla extract, whisking constantly until the batter is smooth and thin.
  6. Stir in the pumpkin pie spice and salt.
  7. In a separate clean bowl, beat the egg whites with an electric mixer until stiff peaks form.
  8. Gently fold the beaten egg whites into the pumpkin batter in three additions. Do not overmix; some streaks of egg white are fine. The batter will be very thin.
  9. Pour the thin batter into the prepared baking pan.
  10. Bake for 50-60 minutes, or until the top is golden brown and the cake is set but still slightly jiggly in the center.
  11. Remove the cake from the oven and let it cool completely in the pan on a wire rack. This is important for the layers to set.
  12. Once completely cooled, chill the cake in the refrigerator for at least 2 hours, or preferably overnight, before slicing.
  13. Dust with powdered sugar before serving, if desired.

Notes

  • Ensure the milk is warm, not hot, to help the batter combine smoothly.
  • Do not overmix the egg whites into the batter; gentle folding creates the distinct layers.
  • Cooling and chilling the cake fully is crucial for the magic layers to solidify and become apparent.
