  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk or cream (as needed)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt. Set aside.
  3. In a large bowl, cream together granulated sugar, brown sugar, and softened butter until light and fluffy.
  4. Beat in eggs one at a time, incorporating each before adding the next. Stir in pumpkin puree and vanilla extract until well combined.
  5. Gradually add dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool completely in the pan on a wire rack before frosting.
  9. For the Cream Cheese Frosting: In a medium bowl, beat softened cream cheese and softened butter until smooth.
  10. Gradually add powdered sugar, one cup at a time, beating until smooth after each addition.
  11. Stir in vanilla extract. Add milk or cream, one tablespoon at a time, until the frosting reaches your desired consistency.
  12. Spread frosting evenly over the cooled cake.
