  • 4 ounces heavy cream
  • 2 tablespoons pumpkin puree (not pie filling)
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • For coating: Cocoa powder or finely chopped pecans

Instructions

  1. Place the chopped chocolate in a medium heatproof bowl.
  2. In a small saucepan, heat the heavy cream over medium heat until it just simmers around the edges. Do not boil.
  3. Pour the hot cream over the chopped chocolate. Let it sit undisturbed for five minutes.
  4. Whisk the mixture gently until smooth and completely combined to form a ganache.
  5. Whisk in the pumpkin puree, vanilla extract, pumpkin pie spice, cinnamon, and salt until fully incorporated.
  6. Cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the ganache to prevent a skin from forming.
  7. Refrigerate for at least 2 hours, or until the mixture is firm enough to scoop.
  8. Using a small spoon or melon baller, scoop out small portions of the chilled ganache. Roll each portion quickly between your palms to form smooth balls.
  9. Roll the finished truffles in your chosen coating, such as cocoa powder or chopped pecans.
  10. Store the truffles in an airtight container in the refrigerator.
