Instructions

  1. Prepare the carrots: Use a vegetable peeler to shave the carrots into long, thin ribbons. Stop peeling when you reach the core. Discard the core pieces.
  2. In a small bowl, whisk together the dressing ingredients: olive oil, soy sauce, lime juice, sesame oil, honey (or maple syrup), Dijon mustard, and black pepper until well combined.
  3. Place the carrot ribbons in a medium mixing bowl.
