  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • For the Red Velvet Swirl:
  • 1/4 cup cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 tablespoon melted butter
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon red food coloring
  • 1 tablespoon unsweetened cocoa powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan, or line it with parchment paper, leaving an overhang.
  2. Make the brownie batter: In a large bowl, whisk together the melted butter and 2 cups of granulated sugar. Beat in the 4 eggs one at a time, then stir in 1 teaspoon of vanilla extract and the red food coloring.
  3. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. Pour about two-thirds of the brownie batter into the prepared baking pan and spread evenly.
  5. Make the cheesecake filling: In a medium bowl, beat the softened cream cheese with 3/4 cup of granulated sugar until smooth. Beat in 1 large egg and 1 teaspoon of vanilla extract. Stir in 1 tablespoon of flour.
  6. Gently spread the cheesecake filling over the brownie batter in the pan.
  7. Dollop the remaining one-third of the brownie batter over the cheesecake layer.
  8. Make the red velvet swirl: In a small bowl, combine the 1/4 cup softened cream cheese, 2 tablespoons of granulated sugar, and 1 tablespoon of melted butter. Stir in 1/4 teaspoon of vanilla extract and 1 tablespoon of red food coloring. Mix in 1 tablespoon of cocoa powder until smooth.
  9. Drop spoonfuls of the red velvet mixture over the top of the brownie batter. Use a knife or toothpick to swirl the red velvet into the brownie batter and cheesecake layers.
  10. Bake for 30-35 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs attached.
  11. Let the bars cool completely in the pan before cutting into squares.
