  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup whole milk ricotta cheese, well drained
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom
  • Zest of 1 lemon (optional)
  • Confectioners’ sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a small bowl. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, then mix in the drained ricotta cheese, vanilla extract, cardamom, and lemon zest, if using.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Drop rounded teaspoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10 to 12 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  9. Dust generously with confectioners’ sugar before serving.

Notes

  • Make sure your ricotta cheese is very well drained. Excess moisture affects the cookie texture.
