  • 1.5 quarts (6 cups) hot chicken or vegetable broth
  • 1/2 teaspoon saffron threads
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely chopped
  • 1 clove garlic, minced
  • 1.5 cups Arborio rice
  • 1/2 cup dry white wine (like Pinot Grigio)
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons unsalted butter
  • Zest of 1 large lemon
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. Warm the broth in a saucepan over low heat. Add the saffron threads to the warm broth and let them steep for at least 10 minutes. Keep the broth hot.
  2. Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  3. Add the minced garlic and cook for 1 minute more until fragrant. Be careful not to burn the garlic.
  4. Add the Arborio rice to the pot. Toast the rice, stirring constantly, for about 2 minutes until the edges of the grains look translucent.
  5. Pour in the white wine. Stir and cook until the wine is completely absorbed by the rice.
  6. Add one ladleful (about 1/2 cup) of the hot saffron broth to the rice. Stir continuously until the liquid is nearly absorbed.
  7. Continue adding the broth one ladleful at a time, stirring frequently and waiting until each addition is absorbed before adding the next. This process takes about 20-25 minutes.
  8. When the rice is creamy but still has a slight bite in the center (al dente), remove the pot from the heat.
  9. Stir in the Parmesan cheese, butter, lemon zest, and lemon juice. Mix vigorously to create a creamy consistency (mantecatura).
  10. Season with salt and pepper to your taste.
  11. Serve immediately in warm bowls, topped with extra Parmesan cheese if desired.

Notes

  • Keep your broth simmering gently throughout the cooking process; adding cold broth will stop the rice from cooking evenly.
  • Stirring constantly develops the starch, which gives risotto its signature creamy texture without needing heavy cream.
  • Taste the risotto before adding salt, as the broth and Parmesan cheese already contain sodium.
