  1. Preheat your oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. For the shortbread base: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Stir in the vanilla extract. Gradually add the all-purpose flour and salt, mixing until just combined and a crumbly dough forms.
  3. Press the dough evenly into the bottom of the prepared baking pan. Bake for 15-18 minutes, or until lightly golden brown.
  4. While the base bakes, prepare the apple filling: In a large bowl, combine the diced apples, brown sugar, lemon juice, cinnamon, nutmeg, and cloves. Mix well to coat the apples evenly.
  5. For the crumble topping: In a separate bowl, combine 1 cup of the shortbread dough mixture (reserved before pressing into the pan) with 1/4 cup of packed light brown sugar and 1/4 cup of all-purpose flour. Use your fingers to rub the ingredients together until a crumbly mixture forms.
  6. Once the shortbread base is out of the oven, spread the apple filling evenly over the warm base.
  7. Drizzle the caramel sauce generously over the apple filling.
